Velvety Sunset Sweet Potato Soup

Ingredients:

  • 2 tablespoons extra-virgin olive oil

  • 1 medium yellow onion, chopped

  • 1 heaping teaspoon sea salt

  • Freshly ground black pepper

  • 4 medium sweet potatoes, peeled and cubed

  • 1 apple, peeled and chopped

  • 3 garlic cloves, grated

  • 1 teaspoon grated ginger

  • 1 teaspoon coriander

  • 1 teaspoon smoked paprika

  • 1 teaspoon apple cider vinegar

  • 3 to 4 cups vegetable broth

  • 1 (14-ounce) can full-fat coconut milk (reserve 1/4 cup for garnish)


Kitchen Utensils:

  • Large pot

  • Wooden spoon

  • Immersion blender or regular blender

  • Soup ladle

  • Serving bowls

Directions:

  1. Heat olive oil in a large pot over medium heat. Add chopped onion, salt, and pepper. Cook until onions are translucent, about 5 minutes.

  2. Stir in sweet potatoes, apple, garlic, ginger, coriander, and smoked paprika. Cook for another 5 minutes, stirring occasionally.

  3. Pour in apple cider vinegar and vegetable broth. Bring to a boil, then reduce heat and let simmer for 20-25 minutes, or until sweet potatoes are tender.

  4. Once the sweet potatoes are soft, remove the pot from heat. Using an immersion blender or regular blender, blend the soup until smooth and creamy.

  5. Return the pot to low heat and stir in coconut milk (reserve 1/4 cup for garnish). Simmer for another 5 minutes to heat through.

  6. Serve hot, garnished with a swirl of reserved coconut milk and a sprinkle of freshly ground black pepper.
