Traditional Calabrese Ricotta Lasagna

Ingredients:

Tomato Sauce:

- 1 can of crushed tomatoes

- 1 can of diced tomatoes

- 2 tablespoons olive oil

- 3 cloves garlic, minced

- 1 onion, finely chopped

- 1 teaspoon dried oregano

- 1/2 teaspoon paprika

- Salt to taste

Ricotta Mixture:

- 2 cups ricotta cheese

- 2 cups fresh spinach, sautéed and chopped

- 2 green onions, finely chopped

- 3 cloves garlic, minced

- 2 eggs

- 1/2 cup Italian breadcrumbs

- Salt and pepper to taste

- 1/4 cup chopped Italian parsley

- 1 cup shredded mozzarella cheese

- 1/2 cup grated Parmigiano cheese

- 1/2 cup grated Asiago cheese

The Lasagna:

- 1 package of Lasagna noodles 454g (enough for 3 layers)

- Additional mozzarella, Parmigiano, and Asiago cheese for topping


Kitchen Utensils:

Directions:

1. Preheat the oven to 375°F (190°C).

2. To make the tomato sauce, heat olive oil in a large saucepan over medium heat. Add the minced garlic and chopped onion, and sauté until they are soft and fragrant.

3. Add the crushed tomatoes, diced tomatoes, oregano, paprika, and salt. Simmer the sauce for about 15-20 minutes, stirring occasionally. Adjust seasoning as needed.

4. In a mixing bowl, combine the ricotta cheese, sautéed spinach, green onions, minced garlic, eggs, breadcrumbs, salt, pepper, parsley, mozzarella, Parmigiano, and Asiago cheese. Mix well until all ingredients are evenly combined.

5. To assemble the lasagna, spread a thin layer of tomato sauce on the bottom of a baking dish. Place a layer of lasagna noodles on top, followed by a layer of the ricotta mixture. Repeat the layers until all ingredients are used, finishing with a layer of tomato sauce on top.

6. Sprinkle additional mozzarella, Parmigiano, and Asiago cheese on top of the lasagna.

7. Cover the 9x13-inch baking dish with foil and bake in the preheated oven for approximately 45-55 minutes. Make sure the lasagna is cooked through and the cheese is melted and bubbly on top. You can also cover the lasagna with foil for the first 40 minutes of baking to prevent excessive browning, then remove the foil for the remaining time to allow the cheese to melt and develop a golden crust.

8. Allow the lasagna too cool slightly before slicing and serving. Enjoy your delicious and authentic vegetarian Italian lasagna!
