Ingredients:

Chocolate Cake:

• 1 3/4 cups all-purpose flour

• 3/4 cup unsweetened cocoa powder

• 1 1/2 teaspoons baking powder

• 1 1/2 teaspoons baking soda

• 2 cups white granulated sugar

• 1/2 teaspoon salt

• 1 cup milk (whole or 2%)

• 1/2 cup vegetable oil

• 2 large eggs

• 2 teaspoons pure vanilla extract

• 1 cup boiling water


Nutella Swiss Meringue Frosting:

• 4 large egg whites

• 1 cup granulated sugar

• 1 cup unsalted butter, room temp, cut into cubes

• 1/2 cup Nutella

• 1 teaspoon pure vanilla extract

• Pinch of salt


Utensils Needed:

• 2 large mixing bowls

• Electric mixer or stand mixer

• Sifter

• Measuring cups and spoons

• Whisk

• Rubber spatula

• 2 8-inch round cake pans

• Parchment paper

• Cooling rack

• Cake stand or serving platter

• Offset spatula for frosting


Directions:

1. Get Ready to Bake:

  • Preheat your oven to 350°F (175°C).

  • Grab two 8-inch round cake pans, grease them up, and line them with parchment paper. A quick dusting of flour or cocoa powder, and you’re good to go!


2. Whip Up the Cake Batter:

  • In a large mixing bowl, sift together the flour, cocoa powder, baking powder, baking soda, and salt.

  • In another bowl, whisk the sugar, milk, oil, eggs, and vanilla until smooth and happy.

  • Mix the dry ingredients into the wet ingredients until they’re just combined.

  • Now for the magic—stir in that boiling water carefully! The batter will be thin, but that means a super moist cake is on its way.

  • Split the batter evenly between your two pans.


3. Time to Bake:

  • Pop those pans in the oven and bake for 35-40 minutes. When a toothpick comes out clean, they’re done!

  • Let the cakes cool in their pans for 10 minutes, then transfer them to a cooling rack to chill out completely.


4. Create the Nutella Frosting:

  • In a heatproof bowl, whisk the egg whites and sugar together.

  • Place the bowl over simmering water (double boiler style) and keep whisking until the sugar is dissolved and the mix reaches 160°F (71°C).

  • Take the bowl off the heat and beat the mixture on high speed until you get stiff, glossy peaks and the bowl is cool to the touch (about 10 minutes).

  • Gradually beat in the butter, one piece at a time, until the frosting is silky smooth.

  • Add the Nutella, vanilla extract, and a pinch of salt, and whip it all together until it’s light, fluffy, and oh-so-delicious.


5. Put It All Together:

  • Place one cake layer on your cake stand or platter, and spread a generous layer of frosting on top.

  • Add the second cake layer, and give the whole cake a quick crumb coat of frosting to lock in those crumbs.

  • Pop the cake in the fridge for 15-20 minutes to set the crumb coat.

  • Finish with a final thick layer of frosting, smoothing it out with an offset spatula.


6. Slice, Serve, and Celebrate:

Cut into that cake and enjoy the sweet symphony of chocolate and Nutella! Serve with a glass of cold milk or your favourite coffee, and let the smiles begin.
