Ingredients:
1 pound of lean ground beef
2 cloves garlic, minced
4 green onions, chopped
2 tbsp olive oil
1 can (28oz) crushed tomatoes
2 carrots, diced
2 celery stalks, chopped
1 red bell pepper, diced
8 oz mushrooms, sliced
1/4 cup fresh cilantro, chopped
1 can (15 oz) refried beans
1 tbsp cumin
1 1/2 tsp smoked paprika
Salt and pepper to taste
1/2 tsp cayenne powder
1 tbsp chili powder

Large pot or Dutch oven
Large nonstick Pan

Directions:
1. In a large nonstick pan over medium heat, brown the lean ground beef until fully cooked.
2. In a large pot, add olive oil, garlic, and green onions. Sauté for 2 minutes until fragrant.
3. Pour in the crushed tomatoes and refried beans. Stir well to combine.
4. Add the cooked ground beef to the mixture.
5. Add carrots, celery, red bell peppers, mushrooms, and all spices to the mixture. Cook until vegetables are slightly softened.
6. Bring the chili to a simmer, then reduce heat to low. Add cilantro.
7. Cover and let it cook for about 45 minutes to 1 hour, stirring occasionally.
8. Taste and adjust seasoning as needed. Serve hot and garnish with additional cilantro if desired.
