Ingredients:
1 pork tenderloin (about 1.5 pounds)
4 slices of prosciutto
1 cup fresh spinach, chopped
1 cup shredded mozzarella cheese
2 cloves garlic, minced
Salt and pepper to taste
Olive oil for searing
2 tablespoons butter
1 teaspoon dried thyme
1 teaspoon paprika
1 teaspoon garlic powder

Directions:
1. Preheat the oven to 375°F (190°C).
2. Butterfly the pork tenderloin by slicing it lengthwise, without cutting all the way through.
3. Lay the pork flat and cover it with plastic wrap. Use a meat mallet to pound it to an even thickness.
4. Season the inside of the pork with salt, pepper, dried thyme, paprika, and garlic powder.
5. Layer the prosciutto, chopped spinach, and shredded mozzarella on top of the seasoned pork.
6. Roll the pork tightly, enclosing the filling, and tie it with kitchen twine at 1-inch intervals.
7. In an oven-safe skillet over medium-high heat, sear the pork on all sides until browned.
8. Add butter to the skillet and baste the pork with the melted butter.
9. Transfer the skillet to the preheated oven and roast for about 25-30 minutes or until the internal temperature reaches 145°F (63°C).
10. Remove the pork from the oven, tent it with foil, and let it rest for 10 minutes before slicing.
11. Slice the pork into rounds, remove the kitchen twine, and serve hot.
