Ingredients:
• 1/4 cup shallots, finely diced
• 1 cup Bella mushrooms (cremini mushrooms)
• 1 tbsp Italian parsley, fresh and chopped
• 1 tbsp fresh rosemary, finely chopped
• 4 cups chicken stock (have more on hand)
• 1 cup Arborio rice
• 1 tbsp extra-virgin olive oil
• 2 tbsp unsalted butter
• 1/3 cup grated Parmigiano Reggiano cheese
• 1/4 cup white wine
• Salt & pepper to taste

Directions:
1. In a large saucepan, heat the chicken stock over medium heat. Once heated, reduce the heat to low to keep it warm.
2. In another large saucepan or skillet, heat the olive oil over medium heat. Add the shallots and sauté until translucent, about 2-3 minutes.
3. Add the mushrooms and cook until they release their moisture and begin to brown, about 5-7 minutes.
4. Stir in the rice and cook for 1-2 minutes until it becomes translucent around the edges.
5. Pour in the white wine and stir until it's absorbed by the rice.
6. Begin adding the warm chicken stock, one ladleful at a time, stirring continuously and allowing each addition to be absorbed before adding more. Continue this process until the rice is creamy and cooked al dente, about 18-20 minutes.
7. Stir in the chopped parsley and rosemary during the last few minutes of cooking.
8. Remove the risotto from the heat and stir in the butter and grated Parmigiano Reggiano cheese until melted and creamy.
9. Season with salt and pepper to taste.
10. Serve the risotto hot, garnished with additional grated parmigiano cheese.
