Ingredients:

  • 6 large eggs, room temperature

  • 5 cups all-purpose flour

  • 2 cups confectioners' sugar

  • 2 tablespoons plus 1-1/2 teaspoons baking powder

  • 1 cup crisco shortening

  • 3 teaspoons almond extract

  • 1-1/2 teaspoons lemon extract


For the Glaze:

  • 3-3/4 cups confectioners' sugar

  • 1/2 cup warm 2% milk

  • 1 teaspoon almond extract

  • 1 teaspoon vanilla extract

  • Coloured sprinkles for decoration


Kitchen Utensils:

  • Mixing bowls

  • Cookie scoop or spoon

  • Baking sheets

  • Wire rack

  • Small bowl (for glaze)


Directions:

1. Preheat your oven to 375°F (190°C) and line baking sheets with parchment paper.

2. Mix Dry Ingredients: In a large bowl, sift together flour, 2 cups confectioners' sugar, and baking powder. Set aside.

3. Cream Shortening and Eggs: In another large bowl, use an electric mixer to cream the shortening until smooth. Gradually add eggs one at a time, beating well after each addition. Stir in the almond and lemon extracts.

4. Combine Ingredients: Gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms.

5. Shape Cookies: Scoop out tablespoon-sized portions of dough and roll into balls. Place on prepared baking sheets and slightly flatten with the bottom of a glass.

6. Bake: Place in the preheated oven and bake for 10-12 minutes or until the bottoms are lightly golden.

7. Prepare the Glaze: While cookies are baking, whisk together 3-3/4 cups confectioners' sugar, warm milk, almond extract, and vanilla extract in a small bowl until smooth.

8. Glaze and Decorate: Once cookies are cooled, dip the top of each cookie into the glaze and return to the wire rack. Sprinkle with colored sprinkles before the glaze sets.

9. Let Set: Allow the glaze to harden for about an hour before serving or storing.
