Ingredients:

  • 2 cups of roughly chopped zucchini flowers (stems and interior removed)

  • ½ cup of all-purpose flour, plus extra as needed

  • ¼ cup Pecorino Romano cheese, grated

  • ¼ cup Parmigiano-Reggiano cheese, grated

  • 3 eggs

  • ½ cup of water

  • Salt and pepper to taste

  • 1/2 tsp baking powder

  • 1 tablespoon of chopped Italian parsley

  • Vegetable oil for frying

Directions:

1. In a mixing bowl, combine the flour, baking powder, salt, and pepper.

2. In another bowl, whisk together the eggs and water

3. Gradually add the wet ingredients to the dry ingredients, stirring until you have a smooth batter. Add more water if needed to reach a pancake batter-like consistency.

4. Add the chopped zucchini flowers, grated cheeses, and chopped Italian parsley to the batter. Mix well to combine.

5. Let the batter rest for 30 minutes.

6. Heat oil in a frying pan over medium heat.

7. Drop spoonfuls of the batter into the hot oil, shaping them into fritters.

8. Fry the fritters until they are crispy and golden brown, about 2 minutes on each side.

9. Remove the fritters from the oil and place them on a paper towel-lined plate to drain any excess oil.

10. Serve the zucchini blossom fritters hot as a delicious appetizer or side dish.
