Instructions:

Cupcakes

  • 1 1/2 cups all-purpose flour

  • 3/4 cup granulated sugar

  •  1 1/4 teaspoons baking powder

  • 1/2 teaspoon salt

  • 1/2 cup unsalted butter , room temperature

  •  2 large eggs

  •  1/2 cup milk

  • 2 teaspoons vanilla extract

  •  1/3 cup Rainbow sprinkles


Whipped Cream Vanilla Frosting

  • 2 cups of whipped cream

  • 1/4 cup of sifted icing sugar

  • 1 pkg of jello vanilla pudding (113g)

Kitchen Utensils:

  •  Standard Muffin tin (12)

  • Cupcake liners

  • Mixing bowls (medium and large)

  • Whisk

  • Hand mixer or stand mixer

  • Measuring cups and spoons

  •  Rubber spatula

  • Piping bag or offset spatula (for frosting)

Directions:

Cupcakes:

1. Preheat your oven to 350°F (180°C) and line a muffin tin with cupcake liners.

2. In a medium bowl, whisk together the flour, sugar, baking powder, and salt.

3. In a separate large bowl, cream the butter until smooth using a hand mixer or stand mixer.

4. Add the eggs one at a time, mixing well after each addition.

5. Stir in the milk and vanilla extract.

6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

7. Gently fold in the rainbow sprinkles.

8. Divide the batter evenly among the cupcake liners, filling each about 2/3 full.

9. Bake for 18-20 minutes, or until a toothpick inserted into the centre comes out clean.

10. Allow the cupcakes to cool completely before frosting.


Whipped Cream Vanilla Frosting:

1. In a mixing bowl, beat the whipped cream with the sifted icing sugar until soft peaks form.

2. Add the vanilla pudding mix and beat until stiff, smooth and creamy.


Finishing Touches:

1. Once the cupcakes have cooled, pipe or spread the whipped cream vanilla frosting on top of each cupcake.

2. Optionally, decorate with additional rainbow sprinkles for a fun and colourful touch.
