Ingredients:
1 cup water
1/2 cup unsalted butter
1/4 tsp salt
1 cup all-purpose flour
2 eggs
1/2 cup granulated sugar
1 tsp ground cinnamon
Vegetable oil, for frying
4 oz dark chocolate, chopped
Sprinkles (optional)

Directions:
1. In a saucepan, bring water, butter, and salt to a boil. Remove from heat and stir in the flour until the mixture forms a dough.
2. Add eggs one at a time, beating well after each addition, until the dough is smooth.
3. Transfer the dough to a piping bag fitted with a star tip.
4. Heat vegetable oil in a deep pan or pot over medium heat.
5. Pipe the dough into the hot oil, cutting to your desired length, and fry until golden brown. Drain on paper towels.
6. In a shallow dish, mix granulated sugar and cinnamon. Roll the warm churros in the cinnamon sugar mixture until coated.
7. Melt the dark chocolate in a heatproof bowl over a pot of simmering water or in the microwave.
8. Dip the cinnamon sugar-coated churros into the melted chocolate and place on a wire rack.
9. Optionally, sprinkle with colourful sprinkles for added fun.
