Ingredients:

Grilled Tilapia:

  • 4 tilapia fillets

  • 2 tablespoons olive oil

  • 1 teaspoon paprika

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • Salt and pepper to taste


The Mango Salsa:

  • 2 ripe mangoes, peeled and diced

  • 1/2 red onion, finely chopped

  • 1 red bell pepper, diced

  • 1 jalapeño pepper, seeded and minced

  • 1/4 cup fresh cilantro, chopped

  • Juice of 1 lime

  • Salt and pepper to taste

Kitchen Equipment:

- Grill (or grill pan)

- Mixing bowls

- Cutting board

- Knife

- Grill tongs

- Brush for oil

- Serving platter


Directions:

1. Preheat your grill to medium-high heat.

2. In a small bowl, mix together the olive oil, paprika, garlic powder, onion powder, salt, and pepper. Brush this mixture onto both sides of the tilapia fillets.

3. Place the seasoned tilapia fillets on the grill and cook for about 3-4 minutes per side, or until the fish is cooked through and easily flakes with a fork.

4. While the tilapia is grilling, prepare the mango salsa. In a medium bowl, combine the diced mangoes, red onion, red bell pepper, jalapeño pepper, cilantro, lime juice, salt, and pepper. Mix well to combine.

5. Once the tilapia is done cooking, remove it from the grill and place it on a serving platter. Spoon the mango salsa over the top of the grilled tilapia fillets.

6. Serve the grilled tilapia with mango salsa hot, garnished with additional cilantro if desired. This dish pairs well with rice, quinoa, or a side salad.
