Ingredients:

  • 2 cups all-purpose flour

  • 1/2 teaspoon baking soda

  • 1/4 teaspoon salt

  • 1/2 cup unsalted butter, melted and cooled

  • 1 cup granulated sugar

  • 1 large egg

  • 2 tablespoons freshly squeezed lemon juice

  • 3 teaspoons freshly grated lemon zest

  • 1/2 teaspoon vanilla extract

  • 1 1/2 teaspoons lemon extract or Limoncello

  • Powdered sugar for coating


Kitchen Utensils:

• Sifter or sieve for powdered sugar


Directions:

1.Preheat the Oven and Prepare Baking Sheet: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

2. Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking soda, and salt.

3. Combine Wet Ingredients: In a large bowl, combine the melted butter and granulated sugar until smooth. Beat in the egg, lemon juice, lemon zest, vanilla extract, and lemon extract until well mixed.

4. Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet ingredients, stirring until the dough comes together.

5. Chill the Dough: Cover the dough and chill in the refrigerator for at least 30 minutes. This makes the dough easier to handle and helps the cookies maintain their shape while baking.

6. Shape and Coat Cookies: Once chilled, roll the dough into 1-inch balls. Roll each ball in powdered sugar until well coated.

7. Bake: Place the coated balls on the prepared baking sheet, spaced about 2 inches apart. Bake for 10-12 minutes, or until the edges are set and the tops are crinkly.

8. Cool: Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a cooling rack to cool completely.

Store in container at room temperature for up to a week.
